    Join David Mountain as he walks you through breaking down of a pig, focusing on the shoulder. You will work hands-on in pairs breaking down a whole, skin-on pork shoulder into “case-ready” cuts like you’d see at a butcher shop. It will be a take-home experience; you will go home with a roast on cure, ribs to cook or freeze, steaks to cook or freeze, a hock to cure, smoke, or braise, as well as bones for stock and skins for animal treats. The class will focus on animal utility and will include a small recipe book and instructions on how to utilize 100% of the primal. The event will end with a meal cooked by Dave himself using portions of what was made in the class. David Mountain is a butcher and bartender. He's worked at Lilia, Ai Fiori, Foster Sundry, and Rolo's, where he currently works. He specializes in whole-animal utility, charcuterie, fermentation, and education.

    Come and experience a night like nothing else as you watch two chefs face off in a 3 course battle, "Iron Chef" style. We will provide some light snacks upon arrival then watch as each chef will receive mystery ingredients and be faced the task of creating an appetizer, a main course and a dessert using each of the ingredients. You will get a first hand look at every step and then you, the guest, will be the judge, getting to decide which chef gets the 1st place dollar prize and which gets the 2nd place. You will get a plate of each chef's 3 courses as well! There will be limited counter seating as well as 2nd-row seating available. All party sizes will be a minimum of 2 guests and a max of 6 due to our limited seating so find a group to enjoy the fun with! This night will be one to remember and one you will never experience anywhere else! Wine, beer and hard seltzers will be welcome to be enjoyed throughout the evening for sale.
