  • Queso fundito with Oaxacan chorizo, fermented pineapple, pickled serrano
  • Baby corn elote, corn pudding, cotija, popcorn
  • Local striped bass ceviche, fermented orange, ginger, toasted chilhuacle negro, grasshopper salt
  • Lamb barbacoa with pasilla de Oaxaca, mole dusted carrots, charred poblano crema
  • The buñuelos with "fermented Oaxacan chocolate sauce"
