BUBBLY
Col di Luna Prosecco [natural] – Crunchy, grower-prosecco that is focused on acidity and minerality. Bone dry but a soft, wash-it-down, carelessly happy bottle of bubbles! Lovely notes of granny smith apples and garden flowers with a crisp, lingering finish. Entirely hand harvested, fermented with native yeasts and bottled with low sulphites.
Lucchetti Pet Nat Rose [natural] – Petillant Naturel is a rustic, unpretentious sparkling wine meant to be enjoyed in its youth. Made using methode ancestrale, the wine is bottled before fermentation is complete, resulting in a gently sparkling wine. Bright and vibrant, with aromatic white peach, strawberry and floral notes. This bubbly rose has a full, rich mouth feel with clean and crisp acidity on the finish!
Carboniste Pinot Grigio Pet Nat [organic / natural] – This wine is made as an experiment in pre-traditional sparkling winemaking. Not modern or “traditional”, Pét Nat (pétillant naturel) wines are often called “ancestral”. Perhaps a happy accident, wine that is bottled before the completion of fermentation will continue to ferment in bottle, trapping the gas that makes the wine sparkle. This was the root of the traditional method used in Champagne! Lemon zest, grapefruits, buttery croissants, with just a little touch of yeastiness. Nice and light and dry. Pairs well with: roasted white meats, fried meats, fried food, stinky cheese, crunchy greens
Geoffroy Premier Cru Champagne [practicing organic] – Expression is the premier cuvée of this excellent estate! It is a wine that shows beautiful ripe fruit aromas with floral nuances and flavors of pear, Meyer lemon, and toasted brioche, as well as ripe apple, peach and grapefruit zest in this firmly structured Champagne.

Rezabel Txakoli Rose [natural & sustainable] – it is the perfect balance of bright green earthiness plus juicy fruit flavors melded with a bright saline fizz that is captivating. Made in a unique Basque style that preserves the natural fresh effervescence of a living wine, the terroir is also quite noteworthy. Kottabos, Syrah Grenache [natural, organic & vegan] – Made by a rockstar young gun winemaker Reenen Borman in South Africa, this wine is a house favorite and always a show stopper. ‘Kottabos’ is a Greek drinking game of the ‘highest skill’ – where after many glasses of wine one elegantly flings the leftover lees (sediment) from naturally unfiltered wine toward targets in the room with fellow drinking friends. The original game of darts! Reenen has created a wine with a subtle but compelling nose of red and black fruit, white pepper and a little earthiness. There is nice fleshiness on entry balanced by fresh acidity and grippy tannins. The dance of these elements delivers a wine that is both immediately enjoyable and intricately complex.
