    ABOUT SOURDOUGH:<\/strong><\/p>\n

    Sourdough bread makes gluten more digestible, as the fermentation process pre-digests the gluten, breaking down some of the indigestible proteins and making the bread easier to stomach. This can eliminate effects like bloating. The lengthy fermentation process breakdowns certain types of carbohydrates (FODMAP) in the wheat, so that your digestion doesn\u2019t have to work so hard.<\/p>\n

    The longer your dough is fermented, the greater the proportion of soluble fibre in the bread. Sourdough also has a high resistance to starch. This combination of soluble fibre and starch resistance generates a feeling of satiety, which keeps you fuller, longer. Fermentation also increases the levels of organic acids in the bread, which slows down the breakdown of the carbohydrate in the body, helping to stabilise blood sugar levels and promote sustained energy.<\/p>\n
